Piña Colada Smoothie Bowl Recipe

In need of an island getaway? This dairy-free, Paleo smoothie bowl will basically transport you to the tropics. With protein from collagen, healthy fats from chia seeds and coconut butter, and natural sweetness from pineapple and banana, you've got the perfect balance of nutritious and delicious. Unsweetened coconut flakes and Piña Colada Paleonola add the perfect crunch to the top, requiring you to chew and allowing your body to release the digestive enzymes that help with nutrient absorption and digestion.

Ingredients: 
1 cup unsweetened almond milk
1 banana
1 cup frozen pineapple (this should be frozen to achieve a thick smoothie consistency)
handful of ice cubes
1 scoop Vital Proteins collagen
2 tablespoons coconut butter (we used eatingEvolved roasted coconut butter)
1 tablespoon chia seeds
Toppings (optional): unsweetened coconut flakes, sliced banana, Piña Colada Paleonola, and 1 tbsp melted coconut butter
Directions:
  1. Combine almond milk, banana, frozen pineapple, ice cubes, collagen, coconut butter, and chia seeds in a high-speed blender.
  2. Mix on high for 15-20 seconds, or until smooth.
  3. Transfer immediately to a bowl and garnish with toppings.
